Nose: Honeycomb, Dark Fruit, Candied Apple & Orange Zest.
Palate: Toffee, Black Pepper & Toasted Oak
Finish: Black Cherry, Vanilla Custard & Cinnamon
Overall: Delicious with a slight punch that dissipates upon a decadent dessert finish.

Nose: A thin apricot/ dark fruit brown sugar
Palate: A very drinkable 121.4. High caramel corn, High cinnamon, Ginger
Finish: Light nutty butter flavor
Overall: Paring with sweet cheese like a Bella Vitano Chardonnay
Paul Fix:
Nose: A light, sweet oak and toast before you put butter on it. Cooked, yellow orchard fruit drizzled with honey peeks out.
Palate: Rich, buttery toffee and gentle oak, which thankfully keeps the drying tannins in the distant background. I’m surprised I don’t get more dark funk, tobacco, or leather considering it’s 9 years old. After an initial pleasant sweet burst, a vanilla mid palate develops into a white peppery tingle on my back palate. No way this drinks like 121.4 proof! I’ve had 100 proofers that were WAY hotter. We should put a warning label on this: “WARNING: May induce feelings of yumminess without the heat!”
Finish: Medium-long finish of honey, dried apricot, and white pepper.
Overall: A solid barrel pick that showcases the Elijah Craig profile. After one dram, it beckons for more. If you like the original 92 proof Elijah Craig, this is a must try!
